Empanadas
In a bowl, place the flour with the salt, butter and vinegar. Pour the water little by little and mix until everything is incorporated. Form a ball, cover and let rest for 15 minutes.
Fry onion, pepper, beef and season with salt and pepper. Cook for 5 minutes and add oregano, cumin, paprika, boiled egg ,and olives. Cook for a few more minutes, let cool and reserve.
Roll out the dough with a rolling pin until it is half a centimeter thick. Cut the dough into circles about 5 cm wide and reserve.
Fill each circle with two tablespoons of the filling and close them by folding them inwards. Place on a tray with waxed paper and glaze with the melted butter. Bake for 30 minutes at 180 C°.
Serve your empanadas on a board and enjoy with a chimichurri.
Alfajores de maicena
In a bowl put mix butter, sugar, and vanilla essence. Add two egg yolks. Add flour and cornstarch. Mix until you get a homogeneous dough.
Let the dough rest for approximately 15 minutes.
Stretch the dough. With a round cutter, assemble the caps. Leave the caps in the refrigerator.
Cook for 10 minutes in an oven at 180º.
Assemble the alfajores by placing dulce de leche between two caps with grated coconut around them.
Bizcochuelo
Preheat oven. Butter and flour a mold.
Beat together eggs, milk, oil, vanilla essence, and sugar.
Sift the flour and beat until all the ingredients are integrated and the mixture is aerated.
Put the mixture in the mold and give it light taps to even out. Take to the oven for 1 hour or until, prodding with a knife, it comes out dry.
Unmold, cut layers and fill them with dulce de leche.
Pastelitos
Put flour in a bowl, make a hole in the middle and add salt and warm water. Mix until everything is smooth and leave it to rest for 1/2 hour.
Add melted fat and blend it together with more flour if necessary. Leave it to rest again.
Start kneading and cutting out squares of around 8 centimeters. Grab two squares, put the filling inside, and fold together.
Cook them in a hot oil pan until golden and crisp.
Add syrup and sugar on top.
Choripan
In a bowl, mix olive oil, parsley, chili flakes, oregano, red wine vinegar, lemon juice, salt, and pepper. Let stand for 20 min and reserve.
In a skillet over medium heat, heat the oil, add the sausages and cook for 10 minutes or until golden brown.
On a board, cut the bread making an incision, add the sausage, the chimichurri and serve.
Accompany with french fries and light beer.
